This simple salad is as satisfying as it is fresh; give it a try!
Serves 6–8.
Cut watermelon in half; store half in the refrigerator for another day. Slice and dice watermelon into 1″ (2.5 cm) pieces. In a small bowl, mix together olive oil, lime juice, black pepper, and honey; set aside. In a large bowl, place watermelon, feta, cucumber, and mint. Pour dressing over, and mix together well. Garnish with fresh mint leaves, if desired.
